I was being so prepared yesterday--I had bread dough in the freezer and I hot soaked and cooked a bag of chickpeas in preparation for Spicy Chickpea Samosas (I've made it with the dough listed here, but I tend to use my own whole wheat bread dough these days).
I took the bread dough out to thaw, went for a run, and when we came back, the dough was still icy in the center. With only an hour and a half before class, I was in a quandry as to what to do. Then I remembered this Warm Butternut Squash and Chickpea Salad. I had sweet potatoes from the most recent BAM basket, so within 30 minutes, we had dinner on the table.
We were glad, in the end, that the dough was icy. I'm still making samosas today, but that salad is quite a find!

This is one of our favorite pizzas lately. If you like babaga noush, you'll probably like this. It can easily be adapted for those of you who don't eat meat or those who don't eat olives. I was sold on the Feliway, but yesterday found a flood in the spare room. I'm guessing it was partially due to the fact that Chloe figured out how to limbo under the baby gate, and she had messed up the litter box situation, basically knocking the lid from one over into the other, so tubby cat couldn't really get to either box. Fun stuff. I was really wanting something for dessert, and came across Cooking Light's Double Ginger Cupcakes with Lemon Glaze. |
